Blueberries

A very simple way to prepare fresh blueberries and have them ready for breakfast or a snack.

Rinse them out. Place them in a bowl with half lemon or one lime. Sprinkle with a tablespoon of sugar. Add some orange juice if desire and some fresh mint.

You are ready to use them on Greek yogurt, ice cream or just like that.

I had dinner with my girlfriend the other evening and her roommate joined us for supper. It was such a delightful surprise to learn that my friend’s roommate was a food addictive like me. I have to quote her here with one of the best compliments a cook can have: “I can tell you know about food because you knew what a besciamelle was.” I felt the same way, when Mel (her name) mentioned cutting vegetable in julienne style. 

Part of this recipe comes from talking to Mel, who is originally from Peru and all the other possible countries in the world. She explained how to marinate red onions in vinegar. Now, I could not remember all the ingredients so I just made the rest up. 

Pink Sandwich:

Black Bread 

2 slices of fresh mozzarella

some slices of red onions marinated in vinegars

vinegar, cilantro, lemon juice, salt, pepper, olive oil

one slice of ham

First chopped the red onions thin and maintain the round shape of the onion. Place the slices inside a container. Chopped one clove of garlic and cilantro and place inside the container with the onions. Add 2 lime juice, some olive oil and pepper and cover all the onions with white vinegar. I believe it is better with cider vinegar. Seal and place in the refrigerator for days. The longer the better. 

When you are ready to make your sandwich, get a slice of black bread. Put a slice of ham, two slices of fresh mozzarella, the onions that had been marinated, some olive oil, salt and pepper and you are done. 

It’s really cute to look at because of the pink colors and it’s very refreshing to eat. I use the black bread you find in the German/foreign section of your supermarket. It’s not cooked or baked. I love it.
