These are some of the healthy food blogs I love to read and replicate recipes.

Lunch Box Lunch: This blog offers vegan recipes that are actually tasty for non-vegetarian eaters. They are also quite simple to make. I don’t usually try recipes often from other sites, but so far this blog has impressed me. The best recipe so far is the mushroom risotto. I swear it is the best thing ever. I have also tried the mac and cheese but it did not turn out the way it looked on picture. I might have messed up the recipe. The fact is that vegan cheese has a very pronounced taste and I am not sure I like it. I tried to use it in the French onion soup and it worked.

Foodimentary: This blog caught my eye because it is concise. It gets to the point with few lines. It highlights food history based on the day (e.g. 2/29). Today it’s National Pistachio Day. The author of the blog, John-Bryan Hopkins also likes to add quotes at the end of each post.

AlternativeEating: This is a blog that it is literally very similar to mine, in the sense that I think and do like the author of this blog. I love all her recipes, her stories of her walks through the snow of Sweden, and her working out routine. And it happens that she is also my age. Check her recipes. They are just so yummy.

Today I have surpassed the master of Banana Bread maker. My friend Brigette is well-known to make great banana bread that I can never replicate. Not until today. I made the best banana bread. Amazing.

Suck it up, don’t suck it in!

I have not really talked about working out or being physically active.  That’s because it is just more enjoyable talking about food and eating. Though, I do enjoy being active. I am not a big fan of the traditional concept of the gym advertised by Gold’s Gym or any of these types of business-oriented gyms. I feel uncomfortable and I can’t stand the smell of rubber.  When I think about working out I see fresh air, mountains, and the beach. Now, the gym is good because it provides structure and organization. The gym at school is awesome and the membership is included in tuition so that is one of the primary places in which I work out. I also jog by my house and do heat yoga at this cute place 5 minutes away from my house. Sometimes I do rock climbing, mountain bike, 5Ks, bricks and whatever I am exposed too. I like diversity because I get bored easily. I also noticed my body easily adopts to the same routine and hence I risk not seeing improvements.

For the first month I really concentrated on muscle building by doing Body Tone, steps, and abs classes. Those classes have been great. I am strong, have built resistance, but did not help me lose the 5 pounds of Christmas cookies that are comfortable sitting on my belly.

As a result, last week I finally decided to add cardio even thought it requires a lot of motivation because I am very lazy. I tried jogging for 20-30 minutes 3 times a week. On Sunday I do hot yoga. If you are not familiar hot yoga is a 90 minutes class of yoga in a room heated at 105 degree with humidity at 40%. It is not recommended for beginners. Actually it is very dangerous. I tried many years ago and almost puked and passed out. The only reason why I can handle it now it’s because I have built endurance by taking other yoga classes and body tone classes. What I like about hot yoga is that it detoxes you and RELAX you. I have never being that relax in all my life. Yes, you sweat and burn 900 calories if not more, but be smart: you are primarily losing liquids.

My goal is to do some kind of cardio 3 times a week and do body training twice a week. So far I have lost 1 pound since January 1, 2012. I lost a Santa Claus xmas cookie;) ahahhaah Damn you Santa:) I think it’s pretty good and healthy.

Fried Oysters

I am tired. Here another recipe from the Romantic/Valentine’s dinner. It only took me forever to type all the recipes….and I am not even done….

Last night I had a total abandonment of healthy diet. I came back around 8 after having worked out for one hour and half and I was starving. It’s reasonable right? I had wished my dinner would have been ready, but it was not and everything in the kitchen required a lot of preparation. The intention was there. I started baking a sweet potatoe and had half a orange. But that was not enough. For dinner I had one chocolate cupcake that had been sitting in the fridge for one week and a mini chocolate mousse. I know. I did not even enjoy it, but I was hungry. So moral of the story. Rely on yourself for cooking and ALWAYS have a healthy ‘safe item’ in the house.

Fried oysters

8 fresh oysters (we buy them from teh gulf since we are only 40 minutes away)

2 eggs beaten and placed in a bowl

1/2 cup of unbleached flour

1/2 bread crambs or panko

canola oil or olive oil for frying (if you use the olive oil the oysters will have a bitter strong taste)

one lemon, salt and pepper

You will have 3 different bowls each filled with one ingridient (one for eggs, one for flour, one for breadf crambs)

Dip each oyster in flour, eggs, and bread crambs. Then place in hot oil and fry for 2 minutes or until crispy and gold on the outside. Sprinkle with lemon once the oysters are set aside on a plate.

Light Healthy Mushroom Risotto

I have been slacking on cooking, relying on extremely convenient dishes like nonethless than a pre-made chocolate piece of cake. I know. It was gone in less than one minute and I was still hungry. I have been picking up on my work out regime including a kick boxing class that left me incapable of walking for 3 days. I have noticed, however, that I have built endurance and muscle at a point that I need to take my work out at the next level. Tomorrow I am going to rock climbing (inside…what were you thinking?;).

I have survived the past days on salads, greek yogurt, granola, chicken, peanut butter, bananas, grilled cheese sandwich and 90% dark chocolate. I am just hungry all the times because of this work out thing. Is that normal? Anyway, I decided to invest in making more “filling” dishes and avoid relying on snacks, even thought when you are at your office and you don’t have a kitchen most likely you will feed yourself with snacks (nuts, apples, dried food, etc).

Dinner tonight is Mushroom Risotto – risotto ai funghi

One cup dried porcini (you are welcome to use fresh mushroom like shiitake)
1/3 fresh onion chopped
Grated ginger (one teaspoon)
Fresh parsley (1/2 cup)
Fresh scallion (one table spoon chopped)
Fresh thyme (at your discretion)
One tablespoon curry
Brown rice (enough for two people)
Coconut milk (one or two cups)

In a bowl soak the mushroom in water. Leave for at least 30 minutes. Drain them but keep the water because you will need it for the rice. Repeat the process twice. Make sure to rinse the mushroom very well because they will taste like dirt. For more taste you can add to the water some Marsala or Japanese rice cooking wine.
Chopped all veggie. In a pot with olive oil brown the curry onion mushroom and fresh herbs. Add one cup of coconut milk, stir add some mushroom broth. Let cook on low heat. In a different pot start cooking the rice. Add some oil, brown the rice for 3 minutes and slowly add broth. Keep doing until half cooked or when broth has been absorbed. At that point pour the mushroom coconut sauce on the pot of the rice and keep cooking until the rice is ready!!
Serve the rice on a plate with a spoon of Greek yogurt.

What’s the big deal with HFCS High Fructose Corn Syrup

Every time I watch the TV guide channel (I don’t have cable, so I rely on the TV guide channel to entertain myself) I get stuck watching the commercial sponsored and paid by the Corn Refiner Association (surprise!) where they assure that HFCS is “fine” in moderation. Too bad they don’t tell you that HFCS and corn syrup in general is not consumed in “moderation.” It is impossible because it is pretty much in everything we eat (bread, yogurt, cereals, cookies, chips, etc).

What s for dinner? Pesto

How much time do you spend discussing what you are going to eat for dinner? I do it constantly and I am never satisfied with my decision. It s like I want the most delicious awesome dish. Food makes me happy. Good food, not bad. Over the years I have indirectly banned many restaurants because I got sick. My gosh.. Unless it is really fresh food I get sick. I never eat out. I discovered that we are better cooks than most mediocre chain restaurant in town. I have to admit: I am getting tired of the low carb diet in terms of diversity, but also texture. As I previously mentioned I am less hungry and have more energy but there is something about a plate of spaghetti with fresh tomatoes that meat cannot replace. I love pasta!!! Not sure what I will be cooking tonight, because I am still at work but I want to share my pesto recipe.

pesto a la Gin

Fresh organic basil (a cup or so)
Fresh arugula (cup)
Fresh mint (few leaves as you like)
Parmigiano reggiano ( parmesan cheese)
Pine nuts ( big spoon)
Garlic optional
Olive oil ( a lot)

I say garlic optional because of the strong flavor. If you decide to use it, don’t put more than one clove.
Use the mixer or blender or whatever, add olive oil slowly. Your pesto should be cover in olive oil once it is placed in a container.

Oh My Healthy Diet

Oh My. I understand now why people do not stick to diets or just a drastic change in habits. Well, mine was not too drastic, butthe word for ANYTHING is life is PERSISTANCE. Persistance is such a rare quality in people, and that is why you observe those who fail or conquer their goals. I am naturally hectic, meaning that I jump from one thing to the other thing. I get bored easily. I started 100 projects at the same time and never finish them all. It’s very surprising that I have lasted so much in school. It is actually the paradox. I am both all over the places but yet I accomplish things…at times very fast.. and others slow….I am definitly better when it comes to work ethics than to my life. Ahahah. So, I skipped one day of posting.

The last time when I made the lemon chicken I ended up eating spinach with garlic, mashed patoes and one piece of Gdiva chocolate. I did. Yes, I did. It was good!.

The next day I had left overs. I was not hungry at all. With the remaining chicken I made lettuce tacos. It’s a great version of traditional tacos. Use a big leaf as your taco, place chicken cooked in taco mix on the lettuce, with diced fresh tomatoes, avocado, cilantro, a spoon of black beans and a spoon of greek yogurt. So good!.

I need to run to pick up Shawn (we only have one car), so I will be right back for tonight’s dinner. Has anyone tried these recipes or what?

I am back. It is about 830pm. I ended up stopping by my friend Brigette to use her Mac, trying to do some Voodo to my new hard drive to fix my laptop. No success, but I was able to get some important files back. I had left over for dinner. The taco thing!!! Thank you left over because I did feel like cooking. Ironic because I cooked for tomorrow morning, lunch and dinner.

This is the basics of my breakfast. I have Greek yogurt ( yes I am obsessed with it), fresh berries, granola or organic oatmeal, apples and grapes. And dried fruit or nuts.

Tomato salad with fresh unsalted feta cilantro and chicken. The chicken again is from the left over lemon chicken. This is why I like to cook whole chickens. You can really make 5 dishes out of it. I am indeed making a broth with the bones.

New York diet

I have been reading extensively about diets – the Atkins diet, the Moon diet, the watermelon diet, the Mediterranean diet- you name it. How about the Gin’s diet? Bc at this point I feel I am just like anybody else who comes up with stupid diets. One that caught my eye is the New York Diet. It is divided in. 3 phases. In the first phase pretty much you don t eat anything. Let me rephrase that. You can only have lean proteins (fish, eggs, meat), green veggies (no starch), no coffee, no cheese or milk, no carbs, no fruits, no no and no. On top of that you have to be engaged in physical activity for at least 45 minutes everyday. The diet is said to shed 14 pounds the first two weeks. Duh!!! I mean who would not with such a restricted diet? So yes the diet works because you work ur ass off.
It is great if you are really determined and driven but let s be honest: most people are not. Most people need to take small steps, to ease in. What I plan to do is to cut carbs such as bread, pasta and rice and to include more green veggies and lean meat. But I am only going to do it gradually and for two weeks. I mean pasta! Really I already miss it. Let me just tell you that the assumption that pasta makes you fat is just an assumption. I have been eating pasta everyday and I am ok. What makes you fat is the sauce that you put on the pasta, the fake, weird tasting ragu stuff that they sell in cans or jars. Same thing for salads. The dressing is full in sugars and fat calories, even if it is ‘low’ fat! I make my own dressing with lemon juice, mustard and olive oil. Vinegar too but the lemon is already zesty!!! My good friend Sophie replaces olive il with a splash of orange juice. Very yummy.

This is a picture of last night dinner. Thai curry veggies and steak soup. I used everything I saw in my fridge that was going bad: onions, peppers, carrots. Added one or two cans of tomatoes and one of coconut milk. One big spoon of curry and other spices and you have a soup. I had two full bowls…..
Today I had half avocado with olive oil, 1/3 steak and a piece of feta cheese. Breakfast was Greek yogurt Fage (awesome) with olive oil and then one full table spoon of peanut butter.

For dinner I am having grilled chicken breast blackened with a blend of spices I created. It’s very easy to do. Take all your spices you have around the house, mix them together and keep them in an open container next to your stove. Every time you want to add some special flavor use that mixture. Obviously don’t mix garlic powder with cinnamon. In general you should always try to use fresh herbs, but we don’t have time or money. If I buy fresh herbs I store them in the freezer so I don’t waste them. I grew so much organic basil over the summer that I decided to store it in the freezer. I also made pesto which I used for pasta or to marinate salmon.

As a side I had peas with olive oil and lemon juice. I also had banana as a snack early in the day and tea.

I am realizing I have not being very systematic and organized in terms of writing: First Day, one egg, one chicken breast, etc. Well, I thought about it and realized that I did not want to do it, because structure irritates me. It makes me think of a diet as something I really hate. It also reflects on a goal that is short term; rather than long term. I want my goal of adapting to a new habit as something enjoyable, not forced.

But you know if I don’t move my butt from my chair my life change efforts will be useless. So tomorrow gym. I have planned to be at the gym at 6:45AM to do spinning and abs. My motivation is the fact that my friend Margot will meet me there. She better. That’s right Margot. You better show up. Doing physical activities with friends makes everything much easier. It’s like drinking with friends.
